Octyl gallate is an ester of gallic acid which is generally used as an antioxidant in food and pharmaceutical industries. It can act against the oxidative damage caused by reactive oxygen species (ROS) in the form of hydroxyl radicals or hydrogen peroxides, and reactive sulphur species (RSS).
Octyl gallate can be used as a reference standard for the determination of octyl gallate in edible vegetable oil by high performance liquid chromatography/time-of-flight mass spectrometry (HPLC/TOF-MS) as well as alternating penalty trilinear decomposition (APTLD) combined with HPLC-diode array detection (DAD) dry foods by reversed-phase HPLC with photodiode array (PDA) detection.
